I was trying to listen to YouTube from a video on my phone while I was driving on a road trip. However, I was not getting the audio to work. My phone said it was connected. Is there a way to listen to YouTube from an iphone while driving?

Phone must be connected via Bluetooth

And your audio source for car should be Bluetooth (not "streaming" or apple music etc)

I do it all the time, play music from my phone via Bluetooth

Whatever your phone is using to generate audio is immaterial. It could be downloaded songs, or live video from YouTube.

As long as Bluetooth is working and is the audio source for the car, you should be able to hear it.

How do I change the audio source of the car?

I just open the streaming app and then change the source from mid top part of the screen

I had to learn how to undo this so my kid could watch Bluey on my phone while I listened to music.

I’m trying to do that while my kid watches her videos. How do I do that without turning off Bluetooth on my phone.
